I am officially a food artisan fan. Maybe it’s because their products are unconventional, not always bound to culinary rule or based on trends but rather a pure joy to cook, prepare, bake or produce unique edible treasures that are as unique as the food artisans themselves. I appreciate this food movement and the ideas bouncing around here in South Florida; and for the most part anchored in the use of locally sourced organic ingredients. Overall Food Artisans care about the people they feed, and the environments from which their food is made; with love and close attention to detail, with quality in mind rather than quantity or mere profit.

On a recent trip to Commercial Kitchen 305 — one of the first Commercial Kitchens in the state — located at 387 NE 167TH ST in North Miami Beach, I got a chance to speak to managing partner Kefren Arjona who coaches and champions for several local food artisans. Why did you start making this product(s):
A popular coffee shop was in need of food that would go well with their products and be easy to serve, especially savory items.

For now only at The Village Stand in Miami Shores, 216 NE 98 St. Miami Shores, FL 33138. I also deliver with a $75 minimum order along the I-95 corridor as far north as Delray Beach.

What would you like people to know about your product?
Our juices are handcrafted cold pressed organic juices. We deliver the juices directly to your home or office. SpaJuiceBar wants to create a convenient wellness experience. Our juices are a combination of vegetables, fruits and herbs. There are a lot of healing benefits in herbs. One of our juices Dandelight has dandelion, apple, peppermint and lemon. Dandelion is known for being a liver cleanser that is high in potassium and is also a natural diuretic. Unlike the diuretics you buy at the pharmacy, dandelion will not deplete the body of potassium instead it provides more potassium. The peppermint is used for the flavor but also for the soothing properties for indigestion, nausea, gas bloating, headaches and antibacterial properties. Apples are high in pectin, soluble fiber, can lower cholesterol levels and help the body’s intestinal muscle push waste through the gastrointestinal tract. Lemon is added to cut the bitterness of the dandelion while providing added alkalizing properties and antioxidants along with vitamin C. There is a method to each juice we create.

Why did you start making this product(s):
After being diagnosed with breast cancer in 2008, I knew I had to take drastic measures to regain power over my health. Juicing soon became an integral part of my life and I quickly began to notice the healing and nurturing benefits of raw juicing. Eventually my doctor confirmed what I already felt; my tumor was shrinking, my skin, hair and nails looked great. I received numerous compliments about my skin and hair as I was going through radiation. I integrated a whole food medicinal juicing routine into my treatment, consuming 32 to 64 ounces of fruits and vegetables five days a week and the other two days I consumed berry spinach smoothies.

Seeing the incredible transformative nature of pure fruits and vegetables, I wanted to share that with the world. SpaJuiceBar was created to help people transform their lives. The SpaJuiceBar experience educates, empowers, revitalizes and energizes anyone who tries the juices.

What would you like people to know about your product?
All our products are made with natural ingredients, no preservatives are added. Since chemical additives are not used, the flavors of each ingredient are fully developed.

Why did you start making this product(s):
Coming from an Italian family, my grandmother instilled in me her passion for the art of bread baking. Based on my passion and culinary education, I wanted to produce a high quality line of baked goods to share it with people who have a love for natural and old fashioned foods.

Where do you sell your product(s)?
For now we have started selling them at Farmers Markets and private events; and look to distribute at local restaurants.
